Oats
Beta-glucan soluble fiber forms a gel in your stomach that slows glucose entry into the bloodstream. Oat eaters show meaningfully lower post-meal glucose spikes.
Beans & Lentils
Resistant starch + fiber + protein. Swapping just half your starchy side for pulses lowered post-meal glucose by about a third in a landmark trial.
Non-Starchy Vegetables
Broccoli, peppers, zucchini, leafy greens: high fiber, minimal carbs. Make them half your plate and the whole meal's glucose load drops.
Berries
